<황옥수수생가루 가공과정>
1. 황옥수수를 수매합니다.(저온창고보관)
2. 1차 기계선별작업, 2차 세척 건조합니다
3. 건조된 황옥수수를 분쇄기를 통해 고운 분말형태로 분쇄합니다.
4. 육안검사 후 포장합니다.
- 이 물품은 건식으로 제조되었으며
습식으로 이용할시 물에 반죽후 약30분간 숙성해야 합니다.
[제작 과정]
곡물을 물에 세척을 하여 건조기에서 건조할때 깨끗한 망사천을 깔고 그 위에 씻은 곡물을 3센티 정도의 두께로 하여 건조를 하는데
낮은 온도로 건조하면 건조시간이 많이 걸리고 3센티중 아래 부분의 곡물은 건조가 되지 않습니다.
그리고 중간에 한번 뒤집어주는 일을 하지 못하는것이 제조공정상의 현황 입니다. 그래서 건조온도는 60도로
하룻밤 정도 건조를 하면 채반전체의 곡물이 분쇄하기에 적당한 수분이 됩니다.
분쇄는 핀크라샤 공법의 분쇄 입니다. 곡물이 기계속으로 내려가면 작은 막대기처럼 생긴 쇠가 돌아가면서
곡물이 파쇄가 되면서 스텐에 작은구멍이 있는곳으로 토출이 됩니다. 작은구멍의크기는 곡물가루의 크기정도로 작은 구멍 입니다.
분쇄할때의 온도는 정확하게 체크를 하기에 현실적으로 어렵습니다만 대략 따뜻한 정도니까 30도정도가됩니다.
닥터비건 6곡생식은 비린내가 심하게 나며 볶거나 익은 것이 전혀들어있지 않은 진짜 생식입니다.
보관 방법
상온보관 (장기보관 시에는 냉장 또는 냉동보관하세요.)
맛있는 옥수수술빵 만들기
준비하기 : 옥수수가루50g, 밀가루200g, 설탕50g, 소금1티스푼, 막걸리200g, 완두콩 또는 옥수수병조림만들기
1. 막걸리를 미지근하게 데운 뒤 설탕과 소금을 넣고 잘 저어서 녹여줍니다.
2. 옥수수가루와 밀가루를 섞은 뒤 체에 내립니다.
3. ①과 ②를 잘 섞어서 볼에 담은 후 랩을 씌우고 천으로 덮어
전기밥통 위나 따뜻한 곳에 5시간을 발효시킵니다.
4. 찜통에 보를 깔고 김이 오르는 찜통에 ③의 술빵 반죽을 넣고 30분 정도 강한 불로 찐 뒤 중간 불에서 5분 정도 뜸을 들인다.

* 옥수수가루로 녹말가루 만드는 법
1. 필요한 양만큼의 옥수수가루를 프라이팬에 올리고 약한불에서 가열합니다.
2. 연한 갈색으로 변할 때까지 약 20분 정도 볶습니다.
